Here’s a little story for you. About 20 years ago, I was a young 19 year old. I had just started dating my now husband and we were at one of his friend’s house. She was making a cake and asked if I wanted to help. I told her I had never baked a cake before and her eyes got wide with disbelief.

The good news? There’s no reason to be intimidated by baking a cake. Because if I could learn how to bake a delicious cake, you could too. I promise.

Whether it’s chocolate cake or red velvet cake I hope you give one of these perfect cakes a try.

And hey, if it’s a fail? There’s always a bakery!

Tips and Tricks for Making Easy Cake Recipes

  • Line your baking pans with parchment paper. If you are using a round cake pan, turn your cake pan over onto the parchment and trace your pan onto the paper.
  • Always then grease both the pan and the parchment paper, it doesn’t matter if it’s with cooking spray, shortening, homemade cake release or butter.
  • Allow each layer of your cake to completely cool before frosting it.
  • Using high-quality ingredients, such as pure vanilla extract, fresh butter, and real cocoa powder, can make a big difference in the flavor and texture of your cake.
  • Don’t overmix: Overmixing the batter can lead to a tough cake. Mix the ingredients until just combined, and avoid overbeating.
  • Make sure all ingredients, especially butter and eggs, are at room temperature before mixing. This will help them blend together smoothly, as well bake evenly.
  • To keep your cake moist, add ingredients such as sour cream, yogurt, or buttermilk to the cake batter.
  • Use a cake flour when you can. Using a cake flour instead of all-purpose flour can make the cake lighter and more tender.
  • Cool the cake: Allow the cake to cool completely before frosting it. This will prevent the frosting from melting or sliding off.
  • After you frost your cake, let it set in the refrigerator for at least an hour to help give you clean slices when you cut into it with a serrated knife.
  • Decorate your cake: Add fruit, such as fresh raspberries or sliced peaches to the top of the cake, pour chocolate ganache or sprinkles can add a pop of color and flavor.

How to Make a Cake Recipe in Advance

You can totally make any cake recipe in advance. After your cake has cooled, wrap each layer in plastic wrap and then store the layers in an airtight plastic bag. You can keep them in the refrigerator if you will be using them in the next day or two. If not, store the cake layers in the freezer up to a month. Dethaw completely before frosting.
