Ingredients

  • 32 oz bag frozen tater tots
  • ½ lb bacon
  • 1 cup sharp cheddar cheese shredded
  • ½ cup tomato; diced
  • ½ cup sour cream
  • 1-2 sliced green onions depending on your tastes

Instructions

  • Preheat the oven to 450 degrees.
  • Chop the bacon into ½ inch pieces, and cook it over medium heat until crispy, turning often. Drain grease.
  • Chop the tomato and the onion.
  • Grease a 9×13 inch casserole dish with cooking spray, and arrange the tater tots in the bottom in a single layer. 
  • Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven, then sprinkle the cheese on top, and then arrange the bacon. Bake for 5 more minutes.
  • Remove from the oven and top with dollops of sour cream, then sprinkle onions and chopped tomatoes.
