Apple Pie Filling Coffee Cake Recipe
You are going to absolutely love this Apple Pie Coffee Cake recipe! This fall favorite is moist and delicious, perfect for brunch or an afternoon treat with coffee and tea. The best part? The streusel topping!
Ingredients
- Apple Coffee Cake
- 1 cup vegetable oil
- 2 eggs
- 1 1/2 teaspoon vanilla extract
- 1 cup milk
- 1 cup sugar
- 3 cups flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 Tablespoon cinnamon, optional
- 1 can apple pie filling (or can use less, as desired)
- For the streusel topping:
- 1 cup flour
- 1 cup brow sugar
- 2 Tablespoons cinnamon
- 6 Tablespoons butter, melted
Instructions
- Preheat oven to 350F
- Grease or line a standard-sized loaf pan and set aside.
- In a large bowl, beat together the oil, eggs, vanilla and milk. Add in the sugar and continue to beat until no sugar crystals remain.
- In a small bowl, stir together the flour, baking powder, salt and optional cinnamon.
- Stir the dry ingredients into the oil mixture until just combined.
- The number of apple layers you want in your cake will effect your assembly. For one apple layer, place 2/3 of the batter in the loaf pan and then spoon some apple pie filling into the centre - leaving 1” all around the apple pie filling to avoid it burning and causing the loaf to break in half.
- You may want to press down the apple pie filling a bit with the back of a spoon.
- Pour the remaining batter over the apple layer and smooth down.
- In a small bowl, combine the streusel topping ingredients and then sprinkle over the wet apple crumb cake batter.
- Bake your apple crumb cake for 30-35 minutes, until an inserted toothpick comes out clean of any batter (it will have some apple pie filling stuck to it).
