Funfetti Cake is a fluffy cake made with sprinkles baked into the batter. Funfetti cake mixes were created by Pillsbury in the early 1990s and quickly became a birthday party staple. Funfetti cake is typically made with a vanilla cake mix with rainbow sprinkles baked in. It is often decorated with additional sprinkles, frosting, and other decorations.

Sheet Pan Funfetti Cake Recipe

This Recipe Calls for the Following Ingredients: 

  • 7 oz / 14 tablespoons unsalted butter
  • 1 cup of Granulated Sugar
  • 3 egg whites
  • 2 teaspoons of vanilla extract
  • 2 ¼ cups of all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon Baking soda 
  • ½ cup milk
  • ½ cup of yogurt or sour cream
  • ⅓ cup of Sprinkles
  • 9×13 Cake Pan

Buttercream

  • 3 cups of powdered sugar
  • 4.5oz / 9 tablespoons butter
  • 5 Tablespoons of heavy cream or whole milk
  • 1 teaspoon of Vanilla
  • ⅓-½ cup of sprinkles for topping

Directions:

Preheat the oven to 340 degrees. Set parchment paper on your baking pan and set aside. 

In the bowl of a stand mixer, mix the butter until smooth and combine with sugar. 

Little by little add in the egg whites until combined. 

In a large bowl, sift the flour, baking powder, and baking soda. Mix flour mixture until evenly combined.

In a small bowl, mix the yogurt with the milk and vanilla. Once it is combined add it little by little into your wet ingredients, alternating with the dry ingredients. Scrape the sides and the bottom of the bowl to make sure you have all the ingredients.

Mix funfetti cake mix until smooth and try not to overmix.

Fold in the confetti sprinkles and pour the cake batter onto your prepared pan in a single layer. 

Place in the oven for a bake time for 25 to 30 minutes until you stick a toothpick in and it comes out clean. 

Remove your delicious cake from the oven and let it cool on a cooling rack.

Once your homemade funfetti cake is cool, the last step is to spread the buttercream frosting on top of the cake and top with lots of sprinkles.

  • 5 Tablespoons of Whipping cream
  • 1 teaspoon of Vanilla
  • ⅓- ½ cup of sprinkles for topping

Make buttercream frosting.

Once it is cool, spread the buttercream and top with sprinkles.
