Can you turn pancake mix into muffins?
Yes, you definitely can! It’s a quick and easy way to enjoy a muffin version of your favorite pancake flavors.
Here’s what you need:
Start by prepping your muffin tin and setting your oven to the right temperature.

Mix the dry ingredients, adjusting sugar if needed, and combine the wet ingredients separately.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if the batter is a bit lumpy.
Gently fold in your favorite mix-ins like berries, chocolate chips, or even small bits of cooked bacon or nuts for a fun twist.
Spoon the batter into the muffin tin, filling each cup about 2/3 of the way full.
Bake these muffins at 350°F, keeping an eye on them as they approach the 10-15 minute mark. Use a toothpick to check doneness, and adjust the time if you’re making Mini Muffins Using Pancake Mix.
They are similar but not the same. Pancake mix has more leavening agents and a thinner consistency, perfect for pancakes. Muffin mix, on the other hand, contains more sugar and fat for a denser, moist texture suitable for muffins. While you can use pancake mix for muffins with some adjustments (like adding more fat or eggs), using muffin mix for pancakes may not work well due to its thicker consistency.
No, you can store them in an airtight container at room temperature. However, if you want the muffins to last longer, you can refrigerate them for up to 3-4 days. Just make sure they’re cooled completely before placing them in the fridge.
What Can I Add to Pancake Mix Muffins?
You can add a variety of ingredients to the muffin batter to make them more flavorful and fun! Here are some ideas:
How to Store Muffins
Allow the muffins to cool completely at room temperature before storing them in an airtight container for 3-4 days.
Make a double batch and freeze your muffins! Once cooled, place them in a zip-top freezer bag. They can last for about 2 to 3 months in the freezer. To reheat, simply pop them in the microwave for 20-30 seconds or let them thaw overnight in the fridge.

YUMMO!
I never thought of this before. You have one good clever mind! It’s a good Sunday snack for my family. Thanks for sharing.
These sound amazing! My daughter loves pancakes too so I know these would be a huge hit here. They sounds perfect for busy mornings!
I have to pin these for later my daughter loves muffins.
Hi! I have pancake mix that only requires water to be added. Should I just follow the directions on the box or should I use your instructions to add milk and egg? Thank you!
Yup! I use the same kind of pancake mix.
@momma lew, I am sorry but you never answered the question. Do you use water or substatute the water with milk and eggs or both water and milk for the muffins. You was not clear. Thank you
There is no water used in this recipe. As per the ingredients, instructions and video, you use 3/4 cup milk mixed with the egg, oil and pancake mix.
@momma lew, thank you so very much.
You are welcome!!! Hope you enjoy them!
Do these come out sweet enough for kids who are used to smothering pancakes with syrup? haha
Yes, but when you add toppings, it makes it sweet and fun for them! You can also dip them in syrup or add some syrup to the batter.
Can I freeze these? I would like to make them ahead of time and freeze them for a family weekend.
Yes, absolutely! Pancake Muffins or muffins in general freeze great.
@momma lew, thank you
How much of our special topping/ingredient do we add? A cup?
The topping can be as much or as little as you would like!!! About a cup I am sure would do!
I would love to add chia seeds to this, to give my littles a little something extra. Could I just add them in as an add in or should I use them in place of the egg as a binder?
I have to be honest, I am not too familiar with chia seeds or how to use them to answer this question accurately.
@Amanda, in my opinion, if you use chia seeds and egg it would make it too thick/hard, so i would hydrate the chia seeds and then add in place of egg.
It’s pretty easy to follow, however, it fails to say how much sugar is needed. I had to eyeball an amount into the batter. Thankfully I guessed correctly. Other than that, great recipe. I made peanut butter cocoa muffins with this recipe
Because you are using Bisquick, you do not need to add any sugar, that is why it doesn’t say how much to add.
What amount vanilla sugar not listed?????
Hi, because this is using pancake mix there is no need for vanilla and sugar.
Hello in your ingredients list it says nothing about sugar or vanilla, also why does it say alittle bit of milk?
Hello, there is no sugar or vanilla in this recipe since it is already in the pancake mix. The exact measurements are in the printable recipe card – it is 3/4 cup milk.
How much sugar in supposed to go in the recipe? I am looking at the recipe card and there are no measurements for the sugar. I am just going to do like 1/4 cup or maybe less due to not wanting sugar filled muffins.
There is no sugar in the recipe – it was a typo.
I understand the point of using Bisquick batter and not needing sugar. I was just trying to follow the recipe instructions and then became confused on the sugar being added in. I was like wait what? LOL.
How much vanilla extract as it’s not listed in the ingredients?
a tsp or 2
Made 12 of these today, 3 with blueberries 3 with sprinkles, and 6 with chocolate chips. My new kids (5 and 6) ate ALL OF THEM! My son has requested I make a HUGE batch on Sunday so he can take them for lunch during the week too.
Love hearing this!
@momma lew, mine all the chocolate chip sunk to the bottom so I need to add more pancake mix to it it was very runny idk tasted good though just want the chocolate chips in the mix of the muffin
You can coat your chocolate chips in a little bit of flour to help or try using mini chocolate chips.
Made these to use for strawberry shortcake. Turned out great.
Oh! I like that idea, never thought to do that!
My pancake mix only requires water. Why are eggs needed?
Eggs help the muffins rise during baking, giving them a light and fluffy texture.
My kids love when I make these! It’s now a weekly staple in my house!
I love hearing this!
Why don’t you list how much mix and water? It would be helpful.
