    Ingredients

    • 1 cup pancake mix
    • 3/4 cup milk
    • 1 egg
    • 1 tbsp oil
    • 1 tsp vanilla
    • Any of your favorite pancake mixin’s – blueberries mini chocolate chips, etc.

    Instructions

    1. Preheat your oven to 350° F.
    2. Prepare your 12-cup muffin pan with cupcake liners or spray with non-stick cooking spray.
    3. In a large bowl, combine pancake mix, a little bit of milk, egg, and vanilla extract until everything is combined.
    4. If you're using mix-ins like chocolate chips or blueberries, fold them into the pancake batter.
    5. Let your batter stand for a minute or two. 
    6. Use a cookie scoop or spoon to portion out the batter into the greased muffin cups. Fill each cup about 2/3 full.

    5. I would love to add chia seeds to this, to give my littles a little something extra. Could I just add them in as an add in or should I use them in place of the egg as a binder?

      1. @Amanda, in my opinion, if you use chia seeds and egg it would make it too thick/hard, so i would hydrate the chia seeds and then add in place of egg.

    6. It’s pretty easy to follow, however, it fails to say how much sugar is needed. I had to eyeball an amount into the batter. Thankfully I guessed correctly. Other than that, great recipe. I made peanut butter cocoa muffins with this recipe

      1. Hello, there is no sugar or vanilla in this recipe since it is already in the pancake mix. The exact measurements are in the printable recipe card – it is 3/4 cup milk.

    8. How much sugar in supposed to go in the recipe? I am looking at the recipe card and there are no measurements for the sugar. I am just going to do like 1/4 cup or maybe less due to not wanting sugar filled muffins.

    9. I understand the point of using Bisquick batter and not needing sugar. I was just trying to follow the recipe instructions and then became confused on the sugar being added in. I was like wait what? LOL.

    10. Made 12 of these today, 3 with blueberries 3 with sprinkles, and 6 with chocolate chips. My new kids (5 and 6) ate ALL OF THEM! My son has requested I make a HUGE batch on Sunday so he can take them for lunch during the week too.

      1. @momma lew, mine all the chocolate chip sunk to the bottom so I need to add more pancake mix to it it was very runny idk tasted good though just want the chocolate chips in the mix of the muffin
