How to Make Cookie Cupcakes

  • Bring your ingredients to room temperature. This helps the butter, sugar, and eggs blend smoothly, giving your cupcakes a light, fluffy texture.
  • Cream together melted butter with brown and white sugar until smooth.
  • Beat in the egg, egg yolk, and vanilla extract. In a separate bowl, combine flour, salt, and baking soda, then gradually mix the dry ingredients into the wet.
  • Fold in mini and white chocolate chips along with sprinkles.
  • Scoop the batter into lined cupcake tins, filling each about two-thirds full.
  • Bake at 350°F for around 20 minutes until golden brown and a toothpick comes out clean. Start checking at 18 minutes to prevent overbaking; the tops should be golden and slightly springy.
  • Cool completely before adding frosting or a drizzle of melted chocolate for a bakery-style finish.

Tip: Try mixing in different types of chips—dark chocolate, peanut butter, or toffee bits—for a fun twist.

Why are my cupcakes dry?

Overbaking or adding too much flour can cause dryness. Be sure to measure carefully and check for doneness early.
