How to Make Cocoa Mix Cookies

  • Start by creaming together butter, sugar, and brown sugar, then beat in eggs and vanilla.
  • In a separate bowl, whisk flour, hot cocoa mix, salt, baking soda, and baking powder, and mix into the wet ingredients.
  • Stir in dark chocolate chips and mini marshmallow bits until combined.
  • For an extra gooey look, press a few mini marshmallow bits onto the tops of the cookies right before baking.
  • Scoop golf-ball-sized dough balls onto parchment-lined baking sheets and bake until the edges are set and centers lose their shine. These cookies are meant to stay soft and chewy, so don’t over bake.
  • Cool completely before serving these gooey, chocolatey cookies.
Can I freeze the cookie dough?

Yes! Scoop dough balls onto a baking sheet, freeze until firm, then transfer to a freezer bag. Bake straight from frozen, adding 1–2 extra minutes to the bake time.

Can I use regular marshmallows instead of dehydrated bits?

Regular marshmallows tend to melt into a mess, so dehydrated mini bits work best for this recipe.

    Ingredients

    • 1 c unsalted butter softened
    • 1 cup sugar
    • c brown sugar
    • 2 large eggs
    • 1 t vanilla
    • 3 ½ c all purpose flour
    • 1 c hot cocoa drink mix
    • 1 t salt
    • 1 t baking soda
    • 2 t baking powder
    • 1 c dark chocolate chips
    • 1 c mini dehydrated marshmallow bits

    Instructions

    • Preheat the oven to 350 degrees.  
    • Line your baking sheet(s) with parchment and set aside. 
    • In the bowl of a stand mixer, combine the softened butter, sugar and brown sugar.  
    • Cream butter mixture until smooth. 
    • Add in the eggs and vanilla and mix well. 
    • In a separate bowl, sift together the flour, hot cocoa mix, salt, baking soda, and baking powder.  
    • Add to wet ingredients. Switch to the paddle attachment and mix the dry ingredients thoroughly.  
    • Add in the chocolate chips and the marshmallows into the flour mixture.  Mix well.  If your mixer is struggling, mix by hand until the chips and marshmallows are thoroughly combined.  
    • Scoop out golf-ball sized cookie dough balls and place on the prepared baking sheets. 
    • Bake cookies for about 10-12 minutes or until the edges are set and the center is no longer shiny.  Allow to cool completely.  

    Notes

    Keep cookies in an airtight container at room temperature for up to 5 days. Add a slice of bread to the container to keep them soft.
