Ingredients

  • 1 box Vanilla Cake Mix
  • 2 Eggs
  • cup Vegetable Oil
  • ½ cup Powdered Icing Sugar

Instructions

  • Preheat oven to 350F.
  • Line two baking sheets with parchment paper or silicone baking mats. Set aside.
  • In a large bowl, beat together the cake mix, eggs and vegetable oil until smooth and completely combined, about 2 minutes.
  • Use a 1 1/2 Tablespoon cookie scoop to portion out the cookie batter, then roll into balls.
  • Place each ball of dough individually in the powdered icing sugar and toss to coat completely.
  • Place each sugar-coated dough ball at least 3" apart on the prepared cookie sheets.
  • Bake for 10 minutes until lightly golden and spread out.
  • Allow the cookies to cool for 5 minutes on the baking sheet before attempting to remove to a cooling rack or serve.

Notes

Store the cookies in an airtight container at room temperature for up to 5 days.
Freeze baked cookies for up to 3 months, or freeze the unbaked dough balls (without powdered sugar) and coat them just before baking.

    One question: Have you ever tried the recipe using just egg whites? I’m thinking of making these for a wedding and using egg whites would take away the yellowish tint to the cookies but I don’t know if they would mess up the taste or consistency of the cookie.
