How to Make Red White & Blue Whoopie Pies
- Start by mixing white cake mix with eggs and butter, then divide the batter into two bowls—color one red and the other blue using food coloring.
Tip: Gel food coloring works best for bold patriotic colors without thinning the batter. - Using a cookie scoop, scoop the batter onto parchment-lined baking sheets and bake until puffed and golden. A cookie scoop helps keep the cookies the same size so they sandwich together evenly. Try not to overbake—the cookies should stay soft and cake-like.

- While the cookies cool completely, whip up a cream cheese frosting with butter, cream cheese, vanilla, and powdered sugar. You can swap in vanilla buttercream, marshmallow fluff filling, or even store-bought frosting for a quicker shortcut version.
- Let the cookies cool fully before filling so the frosting doesn’t melt or slide.
- Pipe or spoon the frosting between a red and a blue cookie to sandwich them together.
- Finish by rolling the edges gently in red, white, and blue sprinkles for a fun and festive 4th of July treat!
