  • 15.25 oz yellow cake mix
  • 1 cup water
  • ½ cup oil
  • 3 large eggs

For the topping:

  • ¼ cup all purpose flour
  • ¼ cup quick oats
  • 2 tbsp packed brown sugar
  • 2 tsp granulated white sugar
  • ⅛ teaspoon cinnamon
  • 2 tbsp butter, melted
  • 1 – ½ cups peach pie filling

Instructions:

Preheat a 350 degree oven and line cupcake pan with cupcake liners.

Beat the cake mix, water, oil, and eggs in a large mixing bowl or bowl of an electric mixer for 3 minutes.

Divide the batter between 24 cupcake liners, filling them just over halfway.

Transfer the pan to the oven, and bake for 9 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean and the cupcakes are golden brown. 

Once the cupcakes are baked, remove them from the oven and let them cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely, about one hour. 

In a medium bowl, stir together the flour, oats, brown sugar, sugar, cinnamon, and butter. Spread the flour mixture onto a parchment lined rimmed baking sheet, and bake at 350 degrees for 15 minutes.
