Peach Filling:
- 2 cups yellow peaches drained (fresh, canned, or frozen) *We used canned
- 1 teaspoon cornstarch
- ¼ teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
Crisp Topping:
- ½ cup all-purpose flour
- ½ teaspoon kosher salt
- ¼ cup white granulated sugar
- 2 tbsp unsalted butter melted
- 1 teaspoon baking powder
Instructions
- If you are using canned peaches, drain the peaches and set them aside.
- In a medium bowl, add the dry ingredients – cornstarch, ground cinnamon, and pure vanilla extract and whisk together.
- Add in the peaches and toss to coat.
- Pour the mixture into the baking dish and set aside.
- In a small bowl, whisk together the all-purpose flour, kosher salt, white granulated sugar, and baking powder.
- Make sure you use the scoop with a spoon and level with a knife method when measuring the flour.
- Double-check the expiration date of your baking powder. If it is expired, it won’t work properly.
- Then add in the melted butter.
- Whisk the ingredients together until everything is thoroughly mixed together.
- Add the topping on top of the peach mixture with a spoon.
- Line the air fryer basket with parchment paper.
- Place in the air fryer at 350 degrees f and bake for a cook time of 15 – 20 minutes.
- Check the cobbler. If it’s nice and golden brown and the topping is cooked through, remove the pan from the air fryer and let it cool.
- If it still needs to be cooked more, place the pan back into the air fryer and cook at three (3) minute increments.
- Serve this dessert favorite with a little bit of your favorite ice cream or whipped cream.
- To store, keep it in an air-tight container in the fridge for up to five days.
