What is a “Poke Cake”?

It’s actually quite simple to make a poke cake. This is the term given to a box of cake mix that is baked and then with the handle of a wooden spoon poke holes throughout your cake. The holes are then filled with an instant pudding mix to create a moist, sweet treat!

This indulgent dessert is made in all different ways with a variety of pudding and cake flavors. My favorite poke cake recipes include Boston Cream Poke Cake, strawberry poke cake, chocolate poke cake and lemon poke cake.

While your delicious cake is baking, prepare the dry pudding mix with whole milk, set aside.

Once the baked cake is removed from the oven, use the back of a wooden spoon handle to poke holes all over the top of the warm cake – trying not to go through the whole thickness of the cake.

Pour pudding mixture on top of the entire cake, smoothing the pudding into an even layer using an offset spatula over the holes of the cake.

Place cake in the fridge to cool slightly. On top of pudding layer, add whipped cream on top of the cake.

Let your cake sit in the refrigerator for 2-3 hours to let the flavors meld.

Place the delicious cookies into a freezer bag and using a rolling pin, crush the Oreos. You can also use a food processor if you’d like.

Garnish this easy chocolate cake with the crushed Oreo cookies.

  • Add the crushed Oreos on top of your cake just prior to serving.
  • Try garnishing the top of your cake with a chocolate ganache, hot fudge sauce or chocolate chips.
  • The flavors of your cake get better with time, so I recommend you make your cake a day or 2 in advance.
  • If you cannot find the cookies and cream pudding mix, substitute with vanilla or chocolate pudding.
  • Different flavors of Oreos will be a huge hit. Try vanilla cake or red velvet cake mix with vanilla pudding and golden oreos!

Cover your cake tightly with plastic wrap or in an airtight container. Store in the refrigerator for 2-3 days.

If you would like to freeze your poke cake, I recommend you do so before adding the cool whip topping. You can keep your cake frozen for up to 3 months.
