In a large bowl, mix pancake mix, milk, egg, oil, and vanilla until smooth.

How Long to Bake Mini Pancake Muffins?

Mini pancake muffins should be baked at 350°F for 8-10 minutes or until they are golden brown and a toothpick inserted in the center comes out clean. Keep an eye on them, as oven temperatures can vary slightly. If they still look a little underdone, you can add an extra minute or two, but be careful not to overbake, as they can dry out quickly.

    Mini pancake muffins are the perfect grab-and-go breakfast! Made with pancake mix, they’re soft, fluffy, and great for meal prep.

    Ingredients

    • 1 cup pancake mix
    • 3/4 cup milk
    • 1 egg
    • 1 tbsp vegetable oil
    • 1 tsp vanilla
    • 1/3 cup mini chocolate chips
    • 1 pint blueberries washed.

    Instructions

    1. Preheat your oven to 350° F.
    2. Prepare your 24 cup mini muffin pan with cupcake liners or spray with non-stick cooking spray.
    3. In a large bowl, combine pancake mix, a milk, egg, oil, and vanilla extract until everything is combined.
    4. If you're using mix-ins like chocolate chips or blueberries, drop a few tablespoons into the batter after the mix is in the pan.
    5. Let your batter stand for a minute or two.
    6. Use a 1 tablespoon portion scoop or spoon to portion out the batter into the greased muffin cups.
    7. Fill each cup about 2/3 full.
    8. Bake the muffins in the preheated oven for 8-10 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean.
    9. Let the muffins cool in the muffin tin for a few minutes before removing them.
    10. Then, transfer them to a wire rack to cool completely.
    11. Serve the mini pancake bites with warm syrup or melted butter.
