First, you’ll want to grab four fresh bell peppers — any color works, just make sure they’re the same size — then slice off the tops and scoop out the insides.
To make the stuffing, mix together the cooked white rice, browned ground beef, garlic, salt, pepper, tomato paste, and diced tomatoes in a big bowl.
Stuff each pepper with the mixture. Be sure not to overstuff, just leave a little space at the top so the filling heats through and the cheese melts without spilling over.

Pop them into the air fryer at 350°F, and cook for about 10 minutes.
Then sprinkle on some shredded cheddar cheese and air fry for another few minutes until it’s nice and melty.

You’ll want to air fry stuffed peppers at 350°F for 10 minutes, then add the cheese on top and cook for another 3–5 minutes until the cheese is melted and bubbly. That’s about 13–15 minutes total, depending on your air fryer model and the size of your peppers.

The peppers should be soft, and the filling hot. The cheese on top should be melted and bubbly—usually around 13–15 minutes total.
To reheat a stuffed pepper, preheat your air fryer to 350°F and heat it for about 5–7 minutes. Check to make sure it’s hot all the way through—if not, give it another minute or two. You can also cover it loosely with foil to keep the cheese from over-browning.
