Ingredients

  • 1 package of muffin mix about 7–8 oz
  • ¾ cup milk adjust as needed for consistency
  • 1 egg
  • 1 tablespoon oil or melted butter

Instructions

  • In a mixing bowl, combine the muffin mix, milk, egg, and oil.
  • Stir until just combined. A few lumps are fine!
  • If the batter is too thick, add a splash of milk until it reaches the desired consistency.
    Heat a nonstick griddle or skillet over medium heat.
  • Lightly grease with butter or cooking spray.
  • Pour batter onto the griddle (about ¼ cup per pancake).
  • Cook until bubbles form and edges set, then flip and cook until golden brown.
