What’s the secret to perfectly fried shrimp?

Follow a few simple—but game-changing—techniques:

  1. Keep the shrimp cold – they hold their shape better and help the breading stick.
  2. Use a three-step dredging process: Flour → egg → panko (or breadcrumbs). This gives you that light, crispy, restaurant-style coating that won’t fall off.
  3. Season every layer.
  4. Fry at the right temperature: 350°F. Too cool = soggy. Too hot = burnt coating, raw shrimp. 350°F keeps everything crisp and evenly cooked.
  5. Don’t crowd the pot. Small batches prevent the oil temperature from dropping and give you an even golden color.
  6. Drain on paper towels or a wire rack – This keeps the shrimp crunchy instead of letting them steam.

How long do shrimp need to be fried?

Shrimp typically need about 3–5 minutes in hot oil (around 350°F). They’re done when the coating is golden brown and the shrimp turn opaque and firm.

Do you put flour on fried shrimp?

Yes! A light coating of flour helps the egg and breadcrumbs stick better and gives the shrimp a crisp, even coating.

Is it better to fry shrimp in flour or cornstarch?

Both work, but cornstarch gives a lighter, crispier crunch, while flour creates a sturdier coating. Many cooks use a mix of the two for the best texture.

How long to soak shrimp in milk before frying?

If you choose to soak the shrimp, 10–15 minutes is plenty. This helps remove any fishy smell and tenderizes the shrimp slightly before breading.
