Strawberry Shortcake Biscuit Recipe
Ingredients
For the strawberries:
- 1 lb. fresh strawberries sliced
- ¼ cup granulated sugar
For the shortcake:
- 2 ⅓ cups bisquick
- ⅔ cup milk
- 3 tbsp. sugar
- 3 tbsp. melted butter
- Whipped cream or cool whip
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- To make the macerated strawberries, mix the cut strawberries and 1/4 cup sugar in a large bowl, and stir.
- Let the mixture sit for about 30 minutes to allow the strawberries to release their juices and create a delicious syrup.
- Use fresh berries for the best flavor. If strawberries are out of season, you can use frozen strawberries, but make sure to thaw and drain them well.
- In a large mixing bowl, fold together the bisquick, milk, sugar, and melted butter, until combined.
- Drop biscuit dough onto a baking sheet, making 6 mounds.
- Brush the top of the biscuit with melted butter.
- Let the biscuits bake for 14-16 minutes, until golden brown.
- Remove from the oven and let cool.
- For serving, split one of the biscuits in half.
- To the bottom half, add some of the whipped cream and strawberries with their syrup from the bowl.
- Top with the top half, and add more cream and strawberries.
