Yes, absolutely. The Instant Pot works just like a regular soup pot but faster. You can sauté, pressure cook, and simmer all in one pot, making cleanup easier too.

  1. Start by sautéing cubed chicken, celery, and onion in the Instant Pot until the chicken is browned. Don’t skip this step—it adds a rich, savory base to the soup and helps bring out the best flavor in your chicken
  2. Add chicken broth and carrots, then pressure cook on high for 5 minutes with a quick release.
  3. Stir in gnocchi, spinach, and heavy cream, and simmer until the gnocchi float to the top.
  4. Finish with a sprinkle of parmesan and serve!

Trick: Swap in rotisserie chicken.
Short on time? Use pre-cooked rotisserie chicken and skip the sauté step—just pressure cook the veggies and broth, then add the chicken with the gnocchi and cream.

Can I make this soup ahead of time?

You can! Just store it in the fridge and reheat gently. Gnocchi may absorb some of the liquid, so add a splash of broth or cream before serving.

Should you cook gnocchi before adding to soup?

Nope! There’s no need to pre-cook gnocchi. Just add it directly to the hot soup and simmer until the gnocchi float to the top—this means they’re cooked through and perfectly tender.

How do you keep gnocchi from getting soggy in soup?

Add gnocchi at the end and only simmer for a few minutes—just until they float. Overcooking can cause them to break down and get mushy, especially in creamy soups.

What is a nondairy version of this recipe? Dairy recipes alienate lactose intolerant readers like myself. 🙁

      1. I’m sorry this one isn’t a fit for you. While this isn’t a dairy-free blog and I don’t test recipes without dairy, I appreciate you taking the time to comment.

I would use a dairy-free heavy cream option.

I can’t use coconut cream as a substitute because it would taste too sweet &/or tropical when it is supposed to taste savory & Italian. What would better substitute be to maintain the thick creaminess but without the dairy?
