Instant Pot Chicken Gnocchi Soup Recipe
Ingredients
- 1 lb chicken breast cubed
- 2 cups fresh spinach
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 2 cups chicken broth
- 1 cup matchstick carrots
- 3 cups heavy cream
- 16 oz gnocchi
- 1 Tsp Salt
- 1 Tsp Pepper
- Cooking Spray
Instructions
- Turn the instant pot onto the sauté setting.
- Place the chicken, onion & celery into the bottom of the pot. Lightly spray with cooking spray & set to saute mode until the chicken is browned.
- Pour in the rest of the ingredients: chicken broth & carrots and mix well.
- Place the instant pot lid on & seal shut.
- Turn the instant pot onto high manual for a cooking time of 5 minutes.
- Quick pressure release.
- Turn the instant pot onto sauté.
- Stir in gnocchi, spinach & heavy cream.
- Boil & stir frequently for about 3-5 minutes or until the gnocchi float to the top.
- Garnish with parmesan cheese.

I would use a dairy-free heavy cream option.
I can’t use coconut cream as a substitute because it would taste too sweet &/or tropical when it is supposed to taste savory & Italian. What would better substitute be to maintain the thick creaminess but without the dairy?
