Ingredients

  • 1 lb chicken breast cubed
  • 2 cups fresh spinach
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 2 cups chicken broth
  • 1 cup matchstick carrots
  • 3 cups heavy cream
  • 16 oz gnocchi
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • Cooking Spray

Instructions

  1. Turn the instant pot onto the sauté setting.
  2. Place the chicken, onion & celery into the bottom of the pot. Lightly spray with cooking spray & set to saute mode until the chicken is browned.
  3. Pour in the rest of the ingredients: chicken broth & carrots and mix well.
  4. Place the instant pot lid on & seal shut.
  5. Turn the instant pot onto high manual for a cooking time of 5 minutes.
  6. Quick pressure release.
  7. Turn the instant pot onto sauté.
  8. Stir in gnocchi, spinach & heavy cream.
  9. Boil & stir frequently for about 3-5 minutes or until the gnocchi float to the top.
  10. Garnish with parmesan cheese.
