How to Make Chocolate Peppermint Cake Mix Cookies
- Mix chocolate cake mix with butter and eggs until smooth.
- Stir in chocolate chips, crushed peppermint candy, and peppermint bark pieces, then scoop and slightly flatten the dough on a parchment-lined baking sheet.
- Bake at 350°F for about 8 minutes, then top with extra peppermint and chocolate for a festive finish. The cookies should look slightly soft in the center when you take them out—they’ll firm up as they cool.

Flat cookies can result from melted butter that’s too warm or overmixing the dough, both of which can make the cookies spread too much. To avoid this, make sure the melted butter is slightly cooled before mixing, and avoid over-beating the dough. Chilling the dough for about 15 minutes before baking can also help the cookies hold their shape!
Yes! Try white, red velvet, or even devil’s food cake mix for a fun twist.
It’s not required, but chilling for 15–20 minutes can make the cookies thicker and chewier.
