Ingredients

  • 1 1/2 pounds chicken breast, (about 3 large breasts) trimmed and diced small
  • 1 large egg, beaten
  • 1/3 cup all-purpose flour
  • 3/4 cup mozzarella cheese
  • 1/3 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley or 1 tablespoon fresh minced parsley
  • 2 Tablespoons olive oil

Instructions

  1. In a large bowl, combine the chicken, egg, flour, cheeses, salt, pepper, dill, paprika, onion powder, garlic powder and parsley.  
  2. Heat the olive oil in a pan, then spoon a tablespoon of the chicken and flatten into a small patty.  
  3. Fry patties in the hot oil for 3 minutes per side. 
  4. If the patties are thicker, they will need to be fried a little longer. 
  5. Break one open and check for doneness.
  6. Serve with your favorite sauces

Notes

Store in an airtight container in the refrigerator for up to 5 days. These can be frozen for up to 3 months.
