Ingredients

For the Cake:

  • 2 cups Bisquick mix
  • cup sugar
  • ½ cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

For the Crumb Topping:

  • ½ cup Bisquick mix
  • cup brown sugar
  • ¼ cup cold butter

Instructions

  • Set your oven to 375°F and grease an 8×8-inch baking dish.
  • Make the batter: In a large mixing bowl, mix together Bisquick, sugar, milk, egg, and vanilla until smooth.
  • Fold in the blueberries gently to avoid breaking them.
  • Pour the batter into the prepared pan.
    In a small bowl, mix Bisquick and brown sugar.
  • Cut in the cold butter using a pastry cutter or fork until the mixture is crumbly.
  • Sprinkle evenly over the batter.
  • Place the dish in the oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the coffee cake to cool slightly before slicing.
  • Serve warm or at room temperature.

    Easy to make, with ingredients I already had on hand. I double batched it and put it in a 9×13 pan. I took it to a work meeting snack table, and when it was over, my cake pan was empty. That’s about as good of a review as you can hope for!
