What Does 7Up Do in Biscuits?

  • The carbonation helps create light and fluffy biscuits by adding air into the dough while baking.
  • The soda also adds a little sweetness and moisture, helping the biscuits stay soft and tender inside.
  • Combined with sour cream and Bisquick, it creates an easy shortcut biscuit recipe that tastes homemade without all the extra work.

How to Make 7Up Drop Biscuits

  • Preheat your oven and pour melted butter into the bottom of your baking dish to give the biscuits their buttery, golden bottoms.
  • In a large bowl, mix the Bisquick and sour cream together until crumbly, then slowly stir in the 7Up until a soft dough forms. Be careful not to overmix the dough, since that can make the biscuits dense instead of fluffy.
  • Lightly flour your surface and gently pat out the dough before cutting the biscuits.
  • For the best rise, avoid twisting the biscuit cutter as you press down.
  • Place the biscuits close together in the baking dish for softer sides and a tender texture.
  • Bake until golden brown and fluffy, then brush the warm biscuits with extra melted butter before serving.

  • Brush the warm biscuits with melted garlic butter and parsley for a savory side dish that tastes amazing with pasta, chicken, or holiday meals.
  • Make honey butter biscuits by brushing homemade honey butter on top of your biscuits before serving.

Yes! Sprite works just as well in this recipe and gives similar fluffy results.

Why are my 7Up biscuits dense?

Overmixing the dough or using flat soda can make the biscuits dense instead of fluffy.

Do 7Up biscuits taste sweet?

They have a very slight sweetness from the soda, but they still taste like classic buttery biscuits.

Ingredients

  • 4 cups Bisquick Baking Mix plus lots of extra for patting out the dough
  • 1 cup sour cream
  • 1 cup 7Up
  • ½ cup 1 stick of butter

Instructions

  • Preheat a 425ºf oven. While the oven is preheating, place a 9×13 casserole dish with the stick of butter in the oven to melt the butter.
  • Meanwhile, mix Bisquick, sour cream, and 7Up in a large mixing bowl.
  • Make sure your 7Up and sour cream are cold when you add them to the mix. This helps keep the dough light and fluffy.
  • Using Bisquick, flour your work surface, and pour the dough onto the surface.
  • Sprinkle additional Bisquick over top.
  • Fold the dough, and keep adding extra bisquick, until the dough becomes manageable and doesn't stick to your hands terribly.
  • Don't forget your melting butter, remove the pan from the oven once it is melted.
  • Pat dough into a 1 inch thick circle.
  • Use a round biscuit cutter, or the rim of a glass, like a wine glass to cut out the biscuits.
  • Place them into the buttered pan in a single layer.
  • Don’t skimp on the butter in the baking dish. It adds a wonderful flavor and ensures the biscuits don’t stick.
  • Keep combining the dough to cut new biscuits, until you get 12.
  • Bake the biscuits for 10-12 minutes, until the tops are golden brown.
  • Remove your delicious biscuits from the oven and allow the biscuits to cool some in the pan and absorb all of the butter.

Notes

Store leftover biscuits in an airtight container at room temperature for up to 2 days. For longer storage, keep them in the refrigerator for up to 5 days.
