Ingredients

  • 2 cups fresh strawberries diced
  • 1 tbsp sugar
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350 and grease and flour a loaf pan and set aside. 
  • Mix together strawberries and 1 tablespoon sugar and set aside. 
  • In a mixing bowl, add flour, sugar, baking soda, salt, baking powder and cinnamon and mix well.
  • In the bowl with the strawberries, add oil, eggs and vanilla and mix.
  • Add the wet ingredients to the dry and mix until just combined. The batter will be thick. 
  • Pour batter into prepared loaf pan and bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from oven and let stand to cool completely before slicing. 

Notes

Wrap the bread tightly in plastic wrap or store in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5. You can also freeze it!
