How to Make Chili Lime Shrimp Kabobs
Ingredients
- 1 1/2 lb medium fresh shrimp, defrosted, peeled, deveined, tail off, patted dry with paper towels
- 2 cups pineapple, chopped
- 1/2 medium red onion, chopped into large chunks
- 1 1/2 tsp paprika
- 1 teaspoon chili powder
- 3 tbsp fresh lime juice
- 4 cloves garlic, pressed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- 1/4 cup green onions, chopped
- lime zest
Supplies Needed:
Bamboo Skewers or Metal Skewers
Pineapple Corer
Garlic Press
Grilling Tools
If you are grilling the sweet chili lime shrimp, preheat your grill to 350-400 degrees. If you are using your oven, that’s fine too! Same temperature will work!
Dice pineapple, and slice onions.
Make Your Simple Marinade:
In a small bowl, combine the shrimp marinade ingredients:
- paprika,
- chili powder,
- lime juice,
- garlic,
- salt & pepper,
- olive oil,
- green onions, and honey
Mix well until ingredients are well combined.
Add the shrimp to the marinade and toss. Be sure to hold onto the remaining marinade.
Add your marinated shrimp and pineapple to your bamboo skewers, adding a slice of red onion between.
(If you decide to use wooden skewers, just be sure to soak them for about an hour so that the wood doesn’t burn while you are grilling)
Drizzle remaining marinade over skewers, and grate the zest of one lime over top.
Cook skewers on the grill grates on direct heat for 3-4 minutes per side, until raw shrimp have turned pink.
Garnish with lime wedges and chopped cilantro.
Serve immediately.
