Stuffed Pulled Pork Sweet Potato Recipe
Ingredients
- 2 large sweet potatoes
- 4 tbsp butter melted
- salt & pepper to taste
- ½ cup Colby & Monterey Jack shredded cheese
- BBQ Sauce to taste
- Sour Cream to taste
- Pickled Jalapenos for topping
- 1 tbsp chopped chives
Instructions
- Preheat the oven to 450°F.
- Wash and dry the sweet potatoes, then use a fork to poke holes all over them.
- Place the potatoes on a rack set over a baking sheet.
- Brush generously with melted butter and season with salt and pepper.
- Bake for about 30 minutes, then remove from the oven and baste with more melted butter.
- Return to the oven and bake for another 25 minutes, or until the potatoes are fork-tender.
- Carefully split each potato open and gently fluff the inside with a fork.
- Add a little more melted butter and an extra pinch of salt and pepper.
- Sprinkle each potato with shredded cheese, then top with pulled pork and drizzle with BBQ sauce.
