Stuffed Pulled Pork Sweet Potato Recipe

Ingredients

  • 2 large sweet potatoes
  • 4 tbsp butter melted
  • salt & pepper to taste
  • ½ cup Colby & Monterey Jack shredded cheese
  • BBQ Sauce to taste
  • Sour Cream to taste
  • Pickled Jalapenos for topping
  • 1 tbsp chopped chives

Instructions

  • Preheat the oven to 450°F.
  • Wash and dry the sweet potatoes, then use a fork to poke holes all over them.
  • Place the potatoes on a rack set over a baking sheet.
  • Brush generously with melted butter and season with salt and pepper.
  • Bake for about 30 minutes, then remove from the oven and baste with more melted butter.
