You don’t need any fancy ingredients to make these mini snowman cheesecakes. With just a few pantry staples, you’ll have a batch of treats that everyone will love.
Here’s what you’ll need:
Start by preheating your oven to 350°F. Line a 12-count muffin tin with cupcake liners and place a vanilla Oreo cookie in the bottom of each liner. This will serve as the crust.
Using an electric mixer, blend the cream cheese, sugar, eggs, and vanilla extract until smooth and creamy. Use room temperature ingredients for a smooth cheesecake batter. This prevents lumps and ensures even baking.
Be careful not to overmix as this can affect the texture of your cheesecakes and cause cracks in the cheesecake. Blend until just combined, then stop to keep them looking smooth.
You can use different extracts to flavor the cheesecake, almond would be fabulous and peppermint would be very festive.
Divide this creamy mixture among the cups and bake until just set.
Allow the baked cheesecakes to cool completely in the fridge to set their texture before decorating.
Once the cheesecakes have cooled completely, decorate each with black sprinkles for the snowman’s eyes and mouth, and half an orange M&M for the nose.
Absolutely! These mini cheesecakes keep well in the fridge for up to 3 days, so they’re perfect for prepping ahead.
No, you can swap Oreos for a graham cracker crust, Nilla wafers or other cookies if you prefer a different flavor.
Yes! Wrap them individually and freeze for up to 2 months. Just be sure to add the snowman decorations after thawing.
