Cheesy Ranch Chicken Recipe
Ingredients
- 4 slices bacon uncooked & chopped
- 1 lb boneless, skinless chicken thighs
- 1 tsp paprika
- 1 tsp garlic powder
- salt & pepper
- 4 oz cream cheese softened
- 1 pkg dry ranch seasoning
- 4 oz shredded cheddar cheese
- chopped parsley for garnish
Instructions
- Preheat oven to 350.
- Add bacon to a large ovenproof skillet and cook over medium heat until bacon is crispy.
- Remove bacon from pan and drain on paper towels.
- Season chicken with paprika, garlic powder, salt and pepper.
- In the same skillet, in the bacon grease, add the chicken. Cook over medium heat, browning chicken on both sides for about 2-3 minutes each side.
- Remove from heat. (If you do not have an ovenproof skillet, add chicken to a greased casserole dish that is safe for the oven.)
- Mix together cream cheese and ranch seasoning.
- Top each chicken thigh with 1/4 of the cream cheese mixture. Mixture may be hard to spread and spoon on top of the chicken, so using your fingertips or the back of a spoon to press the cheese into the chicken works best.
- Top each chicken thigh with 1/4 of the cheese and 1/4 of the bacon. When you add the cheese and bacon, that will allow you to push the shredded cheese into the cream cheese and help spread it onto the chicken thigh.
- Bake for 25 minutes or until thermometer inserted into the center of the chicken measures 165 degrees F.

Sounds delicious,but where does the shredded chicken come from? It doesn’t say anything about shredded chicken at first.You only talk about frying the thighs and place in casserole dish.Did I miss something. Would try this!

My whole family loves this dish! Two things I do differently: 1) I brown the chicken in my cast iron skillet so I can pop it right in the oven instead of transferring to a baking dish, 2) I stir the cream cheese, ranch dressing mix, bacon, and cheddar all together and then spread a blob of it on each piece of chicken. I think it’s easier and comes out just as amazing. Thanks for a great recipe!
