Bisquick Chocolate Chip Scones
Ingredients
- 2 cups Bisquick Baking Mix
- 3 tbsp sugar
- ⅓ cup heavy whipping cream
- 2 tbsp heavy whipping cream divided
- 1 egg
- 1 tsp vanilla
- ⅔ cup semi-sweet chocolate chips
- course sanding sugar
Instructions
- Preheat oven to 425 and line a baking sheet with parchment paper and set aside.
- In a mixing bowl, add sugar and mix well.
- Add 1/3 cup heavy whipping cream, egg and vanilla and mix until just combined.
- Fold in chocolate chips. Dough may be sticky.
- Drop dough onto prepared baking sheet and shape into an 8" circle about 1/2" thick. If dough is sticky and you need to, add some Bisquick baking mix to your hands to prevent the dough from sticking.
- Gently score the dough into 8 triangles with a sharp knife.
- Using a pastry knife, spread remaining 2 tablespoons heavy whipping cream on top of dough. Sprinkle with coarse sugar.
- Bake for 12 minutes or until golden brown.
- Remove from oven and let stand for five minutes before using a sharp knife to slice through each scone.
- Let stand to cool a bit more and serve warm.
