Vanilla Crinkle Cookies with Cake Mix
Ingredients
- 1 box Vanilla Cake Mix
- 2 Eggs
- ⅓ cup Vegetable Oil
- ½ cup Powdered Icing Sugar
Instructions
- Preheat oven to 350F.
- Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- In a large bowl, beat together the cake mix, eggs and vegetable oil until smooth and completely combined, about 2 minutes.
- Use a 1 1/2 Tablespoon cookie scoop to portion out the cookie batter, then roll into balls.
- Place each ball of dough individually in the powdered icing sugar and toss to coat completely.
- Place each sugar-coated dough ball at least 3" apart on the prepared cookie sheets.
- Bake for 10 minutes until lightly golden and spread out.
- Allow the cookies to cool for 5 minutes on the baking sheet before attempting to remove to a cooling rack or serve.

One question: Have you ever tried the recipe using just egg whites? I’m thinking of making these for a wedding and using egg whites would take away the yellowish tint to the cookies but I don’t know if they would mess up the taste or consistency of the cookie.
