How to Make Costco Broccoli Salad

  • Finely chop broccoli florets and stems into bite-sized pieces and place them in a large bowl. Shortcut tip: Grab a bag of pre-chopped broccoli florets to save time.
  • Add diced onions, sunflower seeds, cranberries, cheddar cheese, and crumbled crispy bacon, then stir to combine.
  • Crispy bacon is key. Cook your bacon until it’s very crisp so it stays crunchy after mixing.
  • In a separate bowl, whisk together the mayo, sugar, apple cider vinegar, and lemon juice to make the dressing.
  • Pour the dressing over the salad and fold everything together until evenly coated.
  • For best flavor, refrigerate the salad for at least 30 minutes before serving so the flavors meld.
Can I make this ahead of time?

Yes! This salad actually tastes better after a few hours in the fridge. Just wait to add the bacon until right before serving to keep it crispy.

Can I make this salad without mayo?

You can substitute plain Greek yogurt or a half-and-half mix of yogurt and mayo for a lighter version.
