How to Make Salami Roses

  • Use round, thinly sliced salami or similar deli meat slices. Thicker slices won’t hold as well and may make the rose bulky. Try making roses with other types of round deli meat, such as pepperoni or prosciutto, for a mix of textures and colors on your board.
  • Wine glasses with a thin rim work best, as the slices hold better when pressed tightly against the glass edge. Smaller glasses are ideal for creating petite roses, while larger ones are great for bigger, more dramatic roses.
  • Start with round slices of salami and layer them around the rim of a wine glass to form a stunning rose shape.
  • Start with fewer slices in the first layer (e.g., 3-4), overlapping each slightly, then add more as you go to create a full rose effect. This layering technique builds structure and gives the rose a natural, blooming look.
  • Stack each layer slightly overlapping the previous one, adding more slices as you build out each row to give the rose volume.
  • As you add layers, press the salami slices snugly onto the glass rim to keep them in place. This makes for a tight, cohesive rose that won’t fall apart when flipped.
  • Once your desired size is achieved, flip the rose onto your serving board only when you’re ready to serve, as this keeps the rose shape intact.
  • Place your meat roses on your charcuterie boards last for the freshest presentation.
  • Add small clusters of cheese, nuts, fruits, or crackers around each rose to create a balanced, visually appealing layout.

What Type of Salami Is Best for a Salami Rose?

Thinly sliced Genoa salami is usually the easiest choice because it’s soft, flexible, and folds without cracking. Hard salami also works well if it’s sliced thin. Avoid thick-cut salami since it’s more difficult to bend into petals and may not hold the rose shape as easily.

How Many Slices of Salami Does It Take to Make a Rose?

Most salami roses use 10-16 slices, depending on the size of your glass and how full you want the flower to look. Smaller glasses require fewer slices, while larger wine glasses may need several more layers for a fuller appearance.

How Far in Advance Should I Make Salami Roses?

Salami roses can be made up to 24 hours ahead of serving. Store them in an airtight container in the refrigerator until you’re ready to assemble your charcuterie board. If possible, place them on the board shortly before serving so they stay looking their freshest.

Why Do My Salami Roses Fall Apart?

One of these issues is usually the cause: The salami slices are too thick, not enough slices were used, the slices weren’t overlapped enough, the glass was too large or the rose was removed too quickly instead of gently turning it out.
