Girl Scout Cookie Inspired Thin Mint Donuts Recipe
Ingredients
Chocolate Donut Recipe
- ¾ cup buttermilk
- 1 cup all purpose flour
- ¼ cup sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 TBSP. cocoa powder
- ½ tsp salt
- 2 Tbsp melted coconut oil
- 1 tsp. vanilla extract
Mint Icing
- 1 ½ cups white chocolate chips
- 1 teaspoon melted coconut oil
- 1/2 tsp mint extract
- a few drops green food coloring
Instructions
- Preheat oven to 350 degrees. Grease a donut pan.
- In a large mixing bowl, add flour, sugar, baking powder, baking soda, cocoa powder and salt. Stir until combined.
- Add in the coconut oil and the buttermilk and stir until fully mixed.
- Use a piping bag or a Ziploc bag with the corner cut, pipe the batter into the prepared pan, filling about 2/3 full.
- Bake for about 8 minutes, or until donuts are fully cooked when a toothpick comes out clean.
- Allow the donuts to cool for 5 minutes in the pan then remove to allow them to cool the rest of the way.
- Melt white chocolate chips with the coconut oil in a medium size microwave safe bowl. Microwave for 1 minute and then continue in 30 second intervals until chocolate is smooth.
- Add the mint extract and a few drops of green food coloring until you reach your desired shade.
- Dip the donuts into the melted chocolate covering them about halfway up the sides.
- Allow the excess chocolate to drip off and set them on a wire rack to fully cure. Repeat with remaining donuts.
- Melt dark chocolate with the oil in a microwave safe bowl. . Microwave for 1 minute and then continue in 30 second intervals until chocolate is smooth.
- Using a fork , drizzle the melted dark chocolate over the donuts allow the chocolate to dry and harden.
