Who doesn’t love a good cookout? I know I do! Having friends or family over doesn’t have to be a lot of work. I use my crock pot all year around and in the summer, it’s perfect to make these Pulled Pork Stuffed Sweet Potatoes.

How to Make the Best Sweet Potatoes:

I have to tell you a little secret I learned recently about baking sweet potatoes. I learned it watching a recipe video on Instagram.

You drizzle the potatoes with a little olive oil before baking. I couldn’t believe I didn’t know this before, because it literally cuts down the cooking time of baking these potatoes by almost half! 

 

How to Make Pulled Pork Stuffed Sweet Potatoes 

Ingredients: 
Your favorite pulled pork recipe
Barbecue sauce of your choice 
6 Sweet Potatoes 

Directions: 
Drizzle sweet potatoes with olive oil. Bake until they are able to be pierced with a fork. 
Shred the pork, slice the potatoes and stuff them with pulled pork. 
Drizzle your pulled pork stuffed sweet potatoes with barbecue sauce and garnish with cilantro.

  • Pulled pork recipe of your choice
  • Barbecue sauce of your choice 
  • 
6 Sweet Potatoes

Instructions

Place the pork roast in the slow cooker. Cook until the roast shreds, about 7-8 hours on low. 

Drizzle sweet potatoes with olive oil. Bake until they are able to be pierced with a fork. 

Shred the pork, slice the potatoes and stuff with pulled pork. 

Drizzle the pulled pork stuffed potatoes with barbecue sauce and garnish with cilantro. 

Notes

Serve with cole slaw.
