Can you put raw bacon in a casserole?

Technically, yes, but it’s better to cook it first. Raw bacon releases a lot of grease and may not crisp up properly when baked in a casserole. Breakfast casserole recipe that’s packed with eggs, cheese, and all your favorite flavors! Perfect for meal prep or feeding a hungry crowd.

Ingredients

  • 6 eggs
  • 3 cups frozen hash browns slightly thawed
  • ½ cup milk
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup diced ham
  • 2 cups shredded cheese divided

Instructions

  1. Preheat oven to 350 and grease a 7"x11" baking pan with nonstick cooking spray and set aside.

  2. Add eggs and milk to a bowl and whisk well. 

  3. Add onion powder, garlic powder, salt and pepper and mix well. 

  4. Stir in hash browns, ham and 1 cup shredded cheese.

  5. Pour mixture into prepared pan and spread evenly. 

  6. Bake for 30-35 minutes or until center is set and a toothpick or knife inserted into the center comes out clean. 

  7. Remove from oven and turn it off.

  8. Top with remaining 1 cup cheese and pop into the warm oven for 2-3 minutes or until the cheese is melted.

  9. Remove from oven and let stand for five minutes before cutting into squares and serving.

Recipe Notes

If you don’t have a 7×11″ pan, I’d recommend trying a 9×9 or 10×10 and adjusting the baking time accordingly. 

To store your breakfast casserole, let it cool completely, then cover tightly with plastic wrap, foil, or an airtight container. Store it in the fridge for up to 3–4 days or freeze it for longer storage (up to 2–3 months). When reheating, bake at 350°F for 15–20 minutes from the fridge, or thaw and bake if frozen. You can also freeze individual portions for easy, grab-and-go breakfasts.
