How to Make Pancakes from Muffin Mix

Ingredients

  • 1 package of muffin mix about 7–8 oz
  • ¾ cup milk adjust as needed for consistency
  • 1 egg
  • 1 tablespoon oil or melted butter

Instructions

  1. In a mixing bowl, combine the muffin mix, milk, egg, and oil.
  2. Stir until just combined. A few lumps are fine!
  3. If the batter is too thick, add a splash of milk until it reaches the desired consistency.
    Heat a nonstick griddle or skillet over medium heat.
  4. Lightly grease with butter or cooking spray.
  5. Pour batter onto the griddle (about ¼ cup per pancake).
  6. Cook until bubbles form and edges set, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.

Recipe Notes

Store leftover pancakes in an airtight container in the refrigerator for up to 4 days.

Freeze pancakes in a freezer-safe bag for up to 2 months. Reheat in the microwave, toaster, or oven until warmed through.
