Boil egg noodles to al dente, so they hold their texture after baking. Drain and set aside.

Sauté vegetables in butter.

To make a roux for tuna casserole, melt 4 tablespoons of butter in a saucepan over medium heat. Add 4 tablespoons of flour and whisk continuously for 1-2 minutes until the mixture becomes smooth and golden. This cooks the flour and removes any raw taste. Slowly add milk and broth, whisking to avoid lumps, until the sauce thickens to a creamy consistency. Adjust the texture by adding more liquid if needed.

Combine Ritz crackers with butter.

To assemble the casserole, combine tuna, vegetables, corn, the creamy sauce and half of the crackers in a large bowl.

Spread the cooked noodles evenly in a prepared baking dish.

Pour the tuna mixture over the noodles and mix lightly to combine.

Sprinkle shredded cheese and the remaining crackers on top.

Bake until the sauce is set and the cheese is melted and bubbly.

To make the cheesy tuna casserole ahead of time, assemble up to a day in advance and refrigerate. Bake as directed when ready.

  • 2 garlic cloves, sliced
  • 4 Tablespoons all-purpose flour
  • 1 cup milk
  • 2 cups broth
  • Salt and pepper, to taste
  • 1 teaspoon dried dill
  • 1 cup corn kernels
  • 1-5oz can tuna
  • 1 cup shredded cheese
  • 1 cup Ritz crackers, crushed

Instructions

  1. Preheat oven to 350F.
  2. Cook the egg noodles according to package directions.
  3. In a medium-sized saucepan, melt 1 Tablespoon of the butter over medium heat.
  4. Add the onion and celery to the butter and cook until onion is translucent, about 3 minutes.
  5. Add the garlic and continue cooking for 1 minute until fragrant.
  6. Remove vegetables to a small dish.
  7. Place 2 Tablespoons of butter in the same saucepan and melt. Stir in the all-purpose flour until you form a brown roux.

  9. Reduce heat to medium-low and simmer for two minutes, then remove from heat.
  10. In a small frying pan, melt the remaining tablespoon of butter over medium heat. Add the crushed Ritz crackers and cook for two minutes.
  11. Place the cooked egg noodles in a casserole dish, then stir in the vegetables (including the corn), tuna and dill sauce (will still be quite thin).
  12. Top with shredded cheese and Ritz crackers.
  13. Bake for 35-30 minutes, until the sauce is set and the cheese is completely melted.
