As an adult, one of the best meals I can serve my family are some of the meals that my husband and I were served as kids. Comfort food at it’s finest! This Tuna Noodle Casserole recipe is one of favorite comfort foods!

Making my tuna noodle casserole recipe is not hard at all. I love egg noodles, they seem to be the star in almost any comfort food recipe, right?

This recipe is made with a creamy roux, corn, crushed buttery ritz crackers and canned tuna. Bake in the oven until your tuna noodle casserole is hot and bubbly.

I like to serve ours with a side of homemade buttermilk biscuits or cheddar biscuits and a side salad. Tuna noodle casserole is super versatile too. You can use any vegetable leftovers you might find in your fridge, peas or carrots work great!

What you will need:

egg noodles
butter
diced
celery
2 garlic cloves
all-purpose flour
milk
vegetable broth
Salt and pepper, to taste
dried dill
corn kernels
1 can tuna
shredded cheese
Ritz crackers, crushed

Preheat oven to 350F.

Cook the egg noodles according to it’s package directions.

In a medium-sized saucepan, melt 1 tbsp of butter. Add the onion and celery and cook until the onion is translucent, usually about 3 minutes.

Add the garlic and continue cooking for 1 minute until fragrant.

Remove vegetables to a small dish.

Place 2 more tablespoons of butter in the same saucepan and melt. Stir in the all-purpose flour until you form a brown roux. Whisk the milk into the roux, and then add the broth and spices.

Increase the heat to medium-high until boiling. Reduce heat to medium-low and simmer for two minutes, then remove from heat.

In a small frying pan, melt the remaining tablespoon of butter over medium heat. Add the crushed Ritz crackers and cook for two minutes.

Place the cooked egg noodles in a casserole dish, then stir in the vegetables (including the corn), tuna and dill sauce (will still be quite thin).

Top with shredded cheese and more crushed Ritz crackers.

  • 4 Tablespoons butter
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 garlic cloves, sliced
  • 4 Tablespoons all-purpose flour
  • 1 cup milk
  • 2 cups broth
  • Salt and pepper, to taste
  • 1 teaspoon dried dill
  • 1 cup corn kernels
  • 1-5oz can tuna
  • 1 cup shredded cheese
  • 1 cup Ritz crackers, crushed

Instructions

  1. Preheat oven to 350F.
