This Cheesy Chicken and Broccoli Casserole is a hearty and creamy dish that the whole family will love! It freezes great to enjoy later! 

My daughter describes this Cheesy Chicken and Broccoli Casserole as “dynamite” or “one of her top 3 favorites”. I am sure Guy Fieri fans will get those remarks haha. 

Seriously though, I made this casserole on a whim one night because I was out of chicken recipe ideas and just needed something different. My daughter is obsessed with broccoli and cheese, so I thought hmmmm….how can I change that up? I kind of just threw everything in a casserole dish and voila – Cheesy Chicken and Broccoli Casserole

We love how creamy and hearty this casserole is. It’s one of those meals you don’t need any special sides for since everything baked right in and there are usually leftovers!

Cheesy Chicken and Broccoli Casserole! 

How to make your Cheesy Chicken and Broccoli Casserole:

You will need: 
white rice, cooked according to package directions
chicken breasts, diced 
broccoli (fresh or frozen) 
cheddar cheese 
cream of chicken soup 
Velveeta cheese
salt and pepper 

Dice your chicken breasts into 1 inch pieces. Saute them until they are browned and cook through in about a tablespoon of olive oil. Season with salt and pepper. 

Cook your rice according to their directions. I am awful at cooking rice, so I have no advice here (I make rice that is cooked in a bag). 

If you are using fresh broccoli, wash and trim the stems. If you are using frozen, cook according to your package’s directions. 

Put the chicken, broccoli and rice into a large bowl. Add in the can of cream of chicken and velveeta. Stir to combine.

Spray a casserole dish with non-stick spray. Spoon your Cheesy Chicken and Broccoli Casserole mixture into the dish. 

Top the casserole with the shredded cheese. 

Bake until the cheese has melted and is bubbly.

What I love about casseroles is that they are super easy to freeze for a later meal. If you decide to make this Cheesy Chicken and Broccoli Casserole, make it in a disposable tray, top with aluminum foil and let it cool before freezing. To make from the freezer, simply put into the oven until it has cooked through.
