Ingredients

  • 1 ½ lb fresh zucchini sliced ⅛” thick
  • 1 cup Bisquick baking mix
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 eggs
  • ¼ cup vegetable oil
  • 2 cups mozzarella cheese divided

Instructions

  • Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray and set aside. 
  • Place sliced zucchini into a large bowl and set aside. 
  • In a smaller mixing bowl, combine bisquick with garlic powder, oregano, onion powder, parsley, salt and pepper and mix well. Set aside. 
  • In a separate mixing bowl, add eggs and oil and beat well together with a wire whisk.
  • Fold in 1 cup of cheese.
  • Add wet mixture to dry Bisquick and mix well.
  • Pour mixture onto sliced zucchini and mix well to evenly coat.
  • Spread mixture into prepared casserole dish. Sprinkle with remaining 1 cup cheese. 
  • Bake for 45-50 minutes or until center is hot. Serve immediately.
