
Fresh zucchini, melty cheese & Bisquick—this bake is always a crowd favorite.
Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray and set aside.
Place sliced zucchini into a large bowl and set aside.
In a smaller mixing bowl, combine bisquick with garlic powder, oregano, onion powder, parsley, salt and pepper and mix well. Set aside.
In a separate mixing bowl, add eggs and oil and beat well together with a wire whisk.
Fold in 1 cup of cheese.
Add wet mixture to dry Bisquick and mix well.
Pour mixture onto sliced zucchini and mix well to evenly coat.
Spread mixture into prepared casserole dish. Sprinkle with remaining 1 cup cheese.
Bake for 45-50 minutes or until center is hot. Serve immediately.
