Quick & Easy Peanut Butter Chicken – Recipe
This Peanut Butter chicken has quickly landed a starring role in my dinner lineup! My husband really enjoys this when I make it for him to have when he comes home from work. It reheats very well and is PERFECT over some simple and comforting white rice.
I haven’t bought chicken since October thanks to my delicious order from Zaycon Foods. I dice up 1 lb of chicken breasts:
I then brown them in extra virgin olive oil, salt & pepper. I use my Ozeri Stone Earth Pan for everything & anything!
While the chicken is cooking, work on your sauce!
See how easy! If you aren’t familiar with coconut oil , you can easily substitute with olive oil. I personally feel that the coconut oil adds a flavor that really melds well with the peanut butter! After you are done mixing your sauce together, add it to the chicken, coat and let it cook for 5-10 minutes on medium-low. The sauce will thicken up a bit and caramelize.
Lately, I have been doubling the sauce recipe because my husband likes a little bit of extra sauce.
