Easy Meatloaf Muffins Recipe

I know what you’re thinking. Meatloaf? In a muffin tin? Trust me, these easy meatloaf muffins are the BOMB! They taste like regular meatloaves but they have an added bonus of being portioned out.

Classic meatloaf is comfort food that everyone loves.

The recipe is super simple and I’ll walk you through it below. If your family loves traditional meatloaf as much as mine does, then this is an easy way to make everyone happy! Picky eaters seem to just love the perfect serving size of the individual meatloaves.

This meatloaf muffin recipe is perfect for serving for a weeknight meal, Sunday supper and makes a great freezer meal! Mini meatloaves are easy to pack up and carry around, but they still taste like real meatloaf because they’re made with all of your favorite flavors. 

Whether you serve these little gems on their own or with mashed potatoes, these muffins will soon become one of your go-to dishes the whole family will love!

How to Make Easy Meatloaf Muffins

Ingredients 

  • 1 cup ketchup (divided)
  • 1 1/2 pounds lean ground beef
  • 1 cup panko bread crumbs
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 2 eggs
  • ¾ c. cheddar cheese, shredded

Instructions

Preheat oven to 350 degrees.

Spray muffin cups with cooking spray.

In a large bowl, combine ketchup, ground beef, bread crumbs, mustard, Worcestershire sauce, pepper, and eggs. Mix the meat mixture with a wooden spoon or with your hands.

Using an ice cream scoop, place meatloaf mixture into muffin tins.

Top each meatloaf muffin with a spoonful of zesty ketchup.

Bake for a cooking time of 20-25 minutes.

Remove the meatloaf cupcakes and top each muffin with some shredded cheese. 

Return to the oven for additional 5 minutes, or until cheese is melted and starts to turn golden brown.

Remove from oven and let cool for several minutes before removing muffins from tin. Serve immediately or freeze for later use. Enjoy!

How to Freeze Meatloaf Muffins 

Let the meatloaf recipe completely cool. 

Put them into a freezer bag, laying flat. 

To enjoy muffin tin meatloaf, defrost in the refrigerator and stand them up on a baking sheet or back into their muffin tin to bake for about 20 minutes at 350 degrees. 

This is one of our favorite recipes to meal prep or use as easy freezer meals. Wrap the muffin tin in plastic wrap until you are ready to bake for a quick meal. And it’s super easy to make a double batch!

How to Vary This Delicious Recipe

The best part about meatloaf is the fact that you can make it in so many different ways! I love to mix things up by swapping out ingredients and finding a new family favorite version of this traditional recipe!

  • Use ground chicken, ground pork, ground turkey or mix meats
  • Swap out the cheese for parmesan cheese
  • Make your muffin pan meatloaf in the air fryer
  • Swap the ketchup for tomato paste, tomato sauce, barbecue sauce or chili sauce
  • Make a meatloaf sauce or a brown sugar glaze

  • 2 Tablespoons mustard
  • 2 Tablespoons Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 2 eggs
  • ¾ c. cheddar cheese, shredded

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine ketchup, ground beef, bread crumbs, mustard, Worcestershire sauce, pepper, and eggs. Mix with a wooden spoon or even your hands. 
  3. I like to use my cookie scoop to spoon the meatloaf mixture into muffin tins, but you could also use a spoon to. Just fill each muffin tin to the top. 
  4. Top each meatloaf muffin with a tablespoon of ketchup.  
  5. Bake at 350 degrees for 20-25 minutes
  6. Remove the pan from the oven and top each muffin with some shredded cheese. 
  7. Return to the oven for additional 5 minutes, or until cheese is melted and starts to turn golden brown.
  8. Remove meatloaf muffins from oven and let cool for several minutes before removing muffins from tin.
  9. Serve meatloaf muffins immediately or freeze for later use. Enjoy!
