Chicken Biscuit Sandwiches
Ingredients
- 2 boneless skinless chicken breasts
- 1 cup buttermilk
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 tsp salt
- ½ tsp black pepper
- ¾ cup cornstarch
- ¾ cup all purpose flour
- vegetable oil for frying
- 6 Biscuits cut in half
- ½ cup honey
- 4 tbsp butter melted
Instructions
- Cut each chicken breast into 3 pieces.
- Add buttermilk, garlic powder, parsley, salt and pepper to a bowl and mix well.
- Add chicken and cover and refrigerate overnight for chicken to marinate.
- Add cornstarch and flour to a shallow dish and mix well.
- Heat at least 1" of vegetable oil in a skillet over high heat until hot.
- Remove chicken from milk mixture (reserving milk mixture) and dredge in cornstarch mixture, coating both sides.
- Dredge in milk mixture, coating on both sides and dredge again in cornstarch mixture, coating both sides before placing into hot oil to cook and brown, about 4-6 minutes on each side.
- Remove from oil and set on a plate lined with paper towels.
- Slice biscuits in half and mix together melted butter and honey until smooth.
- Drizzle honey on biscuits and chicken before putting them together to make a sandwich.
