These easy Bisquick cupcakes are soft, fluffy vanilla cupcakes made with pantry staples and topped with your favorite frosting. They're quick to make, easy to customize, and perfect for birthdays, holidays, or anytime you want a simple homemade dessert.

Ingredients

  • 1 cup white sugar
  • ¼ cup Crisco shortening
  • 3 cups Original Bisquick mix scooped and leveled
  • 1 cup milk
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • Buttercream frosting recipe

Instructions

  • Heat oven to 375 degrees.
  • Line the regular-size muffin cups with paper liners or lightly spray with your favorite non-stick cooking spray.
  • In a large mixing bowl add the sugar and shortening together and beat together for a few minutes with an electric mixer on medium speed.
  • Then add in the eggs, one at a time, and make sure to thoroughly beat them into the mixture.
  • Add in the Bisquick, milk, and vanilla and mix everything together. 
  • Using your spatula, scrape the insides of the bowl. 
  • Spoon batter into muffin tin half full then place the tins into the oven. 
  • Bake for 15 minutes, then check to see if they are done using a cake tester and are golden brown.
  • If they are done, remove them from the oven. If not, put back in and bake at five-minute increments. 
  • When they are done, let them completely cool on a wire rack.
  • Decorate with your favorite frosting.
  • Store your cupcakes at room temperature in an airtight container.
