Oreo Muffins recipe
Ingredients
- 1 cup all-purpose flour
- ⅓ cup sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 3 tablespoon vegetable oil
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 6 oreo cookies
Instructions
- Pre-heat oven temperature to 350*F
- Crush the oreo cookies coarsely. When crushing the Oreos to add to the muffin batter, aim for a mix of larger cookie chunks and smaller oreo pieces.
- Line the muffin pan with paper liners.
- In a medium bowl combine all-purpose flour, baking powder and salt, and set aside
- In a large bowl combine egg, oil, sugar, vanilla extract until mixed well.
- Add the dry ingredients into the wet ingredients until just blended.
- Stir in the ¾ of the oreo cookie crumbs into the muffin batter.
- Add ½ – ¾ cup of milk, if the muffin batter was too thick.
- Spoon the a hearty scoop into the muffin cups, filling each about 2/3 full.
- Sprinkle the remaining crushed oreo cookies on top of the muffins.
- Bake for approximately 18-20 minutes or until a toothpick inserted into the center of the muffin comes out clean.
- Allow the Oreo Muffins to cool in the pan for a few minutes before transferring the cooled muffins to a wire rack to cool completely.
