  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoon vegetable oil 
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract

Instructions

Pre-heat oven temperature to 350*F

Crush the oreo cookies coarsely. When crushing the Oreos to add to the muffin batter, aim for a mix of larger cookie chunks and smaller oreo pieces. 

Line the muffin pan with paper liners.

In a medium bowl combine all-purpose flour, baking powder and salt, and set aside

In a large bowl combine egg, oil, sugar, vanilla extract until mixed well.

Add the dry ingredients into the wet ingredients until just blended.

Stir in the ¾ of the oreo cookie crumbs into the muffin batter.

Add ½ – ¾ cup of milk, if the muffin batter was too thick.

Spoon the a hearty scoop into the muffin cups, filling each about 2/3 full.

Sprinkle the remaining crushed oreo cookies on top of the muffins.

Bake for approximately 18-20 minutes or until a toothpick inserted into the center of the muffin comes out clean.
