What is a muesli bar?
It’s a chewy, oat-based snack made with wholesome ingredients like nuts, seeds, dried fruit, and a touch of honey or syrup to hold everything together. Often baked or pressed and chilled, it’s similar to a granola bar — hearty, slightly sweet, and perfect for a quick breakfast, lunchbox addition, or on-the-go energy boost.

How to Make Muesli Bars
- Preheat the oven to 350°F and line a 9×9-inch pan with parchment paper.
- In a large bowl, mix oats, coconut, dried fruit, almonds, and brown sugar.
- Stir together melted butter and honey (or maple syrup/agave), then pour over the dry ingredients and mix until coated.
- Press the mixture firmly into the pan using the back of a spoon or a piece of parchment paper, this helps the bars keep their shape.
- Bake for 35–40 minutes, until golden brown.
- Let the pan cool completely before slicing, or the bars may crumble. For cleaner cuts, chill them in the fridge first. Then lift out the parchment and slice into bars about 1¼ inches wide and 4½ inches long.

Customize them! Swap in your favorite nuts, seeds, or dried fruit. Just keep the total add-ins to about 1½ cups to maintain the right texture. For an extra treat, drizzle melted dark chocolate or white chocolate over the top once cooled.

Old-fashioned rolled oats work best because they hold their texture and give the bars a chewy, hearty consistency. Quick oats can make the bars too soft or crumbly, while steel-cut oats are too coarse and won’t bind properly without precooking. Rolled oats give you that perfect balance of chew and structure in every bite.
Yes! Skip the oven, press the mixture into the pan, and refrigerate for a few hours until firm. They’ll be a bit softer and chewier.
Yes! Wrap each bar in parchment or plastic wrap and freeze for up to 3 months. Thaw at room temperature before eating.
Cut the brown sugar to ⅓ cup or use unsweetened coconut and tart dried fruit to balance the sweetness.
The key is using the right balance of sticky ingredients and pressing the mixture firmly into the pan. Honey, maple syrup, or agave act as natural binders, especially when warmed and mixed with butter or nut butter. Make sure everything is evenly coated before baking, then press the mixture down tightly using the back of a spoon or parchment paper. Let the bars cool completely — even chilling them in the fridge — before slicing to help them firm up and hold together.
