Ingredients

  • 2 cups old fashioned roll oats
  • 1 cup coconut flakes dried
  • ½ cup dried apricots diced
  • ½ cup dried cranberries diced
  • ½ cup sliced almonds
  • ½ cup brown sugar
  • ½ cup honey, maple syrup or agave
  • 4 tbsp butter melted

Instructions

  • Preheat oven to 350 and line a 9×9 square baking dish with parchment paper and set aside. 
  • Add oats, coconut, apricots, cranberries, almonds and brown to a large bowl and mix well. 
  • Mix together honey (or maple syrup, agave) and melted butter together. Pour into oat and fruit mixture and mix well to evenly coat. Pour into prepared pan. 
  • Spread mixture evenly into pan and firmly press into the pan.
  • Bake for 35-40 minutes or until golden brown. Remove from oven and cool completely before cutting. 
  • Remove parchment paper and slice into bars about 1-1/4" wide and 4-1/2" long
