St Patrick’s Day Fudge
Ingredients
- 3 cups semisweet chocolate chips use good quality chocolate
- 1 ½ cups sweetened condensed milk divided
- ½ teaspoon vanilla extract
- 1 ½ cups mint chocolate chips I used Guittard
- A few drops of green gel food coloring optional
- Gold confetti sprinkles
- Gold sanding sugar
Instructions
- Butter an 8×8-inch square pan or line the bottom of the pan with parchment paper.
- In a microwave-safe bowl, combine chocolate chips and 1 cup of sweetened condensed milk; stir.
- Microwave in 30-second intervals; stir. Continue microwaving in 10 second intervals, stirring each time, until the chips are completely melted (mixture will be thick). Melt chocolate chips just until melted.
- Stir the vanilla into the melted chocolate and mix well.
- Pour the fudge mixture into the prepared pan and spread evenly.
- Mix the remaining ½ cup of sweetened condensed milk with the mint chocolate chips in a medium glass bowl.
- Microwave 1 minute; stir. Microwave in 10 second intervals, stirring well. Heat until all chips are melted.
- Add a few drops of green food coloring too the chocolate mixture to darken the green color.
- Pour the mint mixture over the chocolate layer; spread evenly.
- Decorate the top of the fudge with gold confetti sprinkles and sanding sugar.
- Refrigerate for 1-2 hours or until set, any longer will make your rich fudge difficult to cut through.
- Cut the fudge into 16 small squares and serve.
