How to Make Chicken Fritters 

Ingredients:

  • 1 1/2 pounds chicken breast, (about 3 large breasts) trimmed and diced into small pieces
  • 1 large egg, beaten
  • 1/3 cup all-purpose flour 
  • 3/4 cup mozzarella cheese 
  • 1/3 cup shredded cheddar cheese 
  • 1/2 tsp salt 
  • 1/4 teaspoon ground black pepper 
  • 1/2 teaspoon dried dill 
  • 1/2 teaspoon smoked paprika 
  • 1/2 teaspoon onion powder 
  • 1/2 teaspoon garlic powder or a garlic clove
  • 1 teaspoon dried parsley or 1 tablespoon fresh minced parsley 
  • 2 Tablespoons olive oil

Directions:

In a large mixing bowl, combine flour, the chicken, egg, shredded cheese, salt, pepper, dill, paprika, onion powder, garlic powder and parsley with clean hands.  

Heat the olive oil in a large frying pan in medium-high heat, using an ice cream scoop, spoon about a tablespoon of the chicken mixture and flatten into a small patty.  

Fry chicken patties in the hot oil for a couple of minutes, 2-3 minutes per side until golden brown. If you make larger patties, they will need to be fried a little longer. Break one open and check for doneness.

Transfer to a plate lined with paper towels while you continue to cook remaining crispy chicken fritters.
