I don’t know about you, but since becoming a parent, I feel like everything and anything is for my kids. Except for these Champagne Cupcakes. They’re the perfect dessert for New Years Eve that’s for sure!
 
We enjoy having my kids apart of my new year’s plans. We usually just stay home, just the 4 of us. But that doesn’t mean it can’t be fun!
 
These Champagne Cupcakes are for adults only though. The kids can have some of these fun New Year’s Eve desserts.

How to make these New Years Eve Champagne Cupcakes:

Here’s what you need to make Champagne Cupcakes:

For the Cupcakes-
flour, baking powder, softened butter, sugar, eggs, champagne, milk, vanilla 

For the Frosting-
powdered sugar, softened butter, vanilla, milk, champagne

Let’s get started:
 
Preheat oven to 375 degrees and line a muffin tin with cupcake liners.
 
In a large bowl, cream together butter and sugar until smooth.
 
Add in vanilla and milk, mix.
 
Add eggs one at a time, mixing in between.
 
Stir in champagne.
 
In another bowl, whisk together flour and baking powder.
 
Slowly add dry ingredients to the wet, mixing well in between each addition.
 
Bake for 20-25 minutes until cupcakes begin to turn golden brown.
 
Allow the champagne cupcakes to cool before frosting.

To make the frosting for New Years Eve Champagne Cupcakes:

In a large bowl, mix butter until light and fluffy.
 
Add vanilla and milk, mix well.
 
Add powdered sugar gradually, mixing well in between each addition.
 
Stir in champagne.
 
Pipe icing onto cooled cupcakes.
 
Top your Champagne Cupcakes with gold sprinkles.

  • 2/3 cup butter, softened
  • 1 3/4 cup sugar

  • 3/4 cup milk
  • 1 tsp vanilla
  • Frosting-
  • 3 1/2 cups powdered sugar
  • 1/2 cup butter, softened
  • 1 tsp vanilla
  • 2 tbsp milk
  • 3 tbsp champagne
