Ingredients

  • 2 ¾ cup All-Purpose Flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 12 oz Hard Apple Cider
  • 1 ¼ shredded mozzarella
  • 1 tbsp onion powder
  • 1 tbsp melted butter

Instructions

  • Pre-Heat oven to 375 degrees.
  • Spray a loaf pan with non-stick spray.
  • In a large bowl, mix together flour, sugar, baking powder and salt.
  • Add hard apple cider and mix ingredients together.
  • Mix in cheese and onion powder.
  • Spread mixture into the prepared loaf pan.
  • Brush the top with the melted butter.
  • Bake for approximately 30 minutes.
  • Remove from the oven and sprinkle remaining cheese on top.
  • Cook an additional 5-10 minutes or until a toothpick comes out of the center of the loaf clean.
  • Cool in the pan 10 minutes before removing and letting cool on a wire rack.

Notes

Wrap your bread tightly in plastic wrap or foil and store at room temperature for up to 3 days. For longer storage, freeze slices individually.
Substitute cheese for your preference: Sharp cheddar gives the best savory contrast, but feel free to experiment with gouda, gruyère, or a smoky cheese.

        Is xantham gum required when using GF flour?

        1. It’s highly recommended. I spent years trying to bake without it and wondering why my GF baked goods were so eh. It gives it texture and moisture. A little goes a long way. Conversions are usually on the back of the bag.

    1. I’d say any beer I know of is NOT gluten free. Luckily, Angry Orchard is a hard cider and IS gluten free.
